Kim Shockey's Potato Soup (friend)

3 Large potatoes, peeled and cubed
1 onion, finely chopped
2 Tbs. butter
Salt and Pepper
1/2 Cup Milk
1 lb. Velveeta Cheese

Put potatoes, onion, butter, salt & pepper (to taste) in a pot with enough water to cover potatoes.
Boil until potatoes are soft.
Turn down heat.
Add milk
Put half of mixture in blender and blend
Add blended mixture back to pot
Add Velveeta Cheese
Cook until cheese is melted

Enjoy with French or Onion Bread! :)

Puppy Chow for Kids!

1 Cup Semi Sweet Chocolate Chips
1 Cup Peanut Butter
1 stick of butter
8 Cups Chex Cereal (any kind)
2 Cups powdered sugar
1 large brown paper bag

In a large bowl melt choc. chips, peanut butter, and butter in the microwave for 2 min.
Stir until smooth.
fold cereal into chocolate mix, coating all cereal pieces
toss cereal mix into brown paper bag
toss powdered sugar into bag
close bag securely and shake, coating all cereal pieces
Toss into large bowl and enjoy!

Chicken Pot Pie with Cheddar Biscuit Topping (Taste of Home)
Prep: 20 min.
Yield: 9 servings

4 Cups cubed cooked chicken
1 pkg. (12 oz.) frozen broccoli and cheese sauce
1 can (10-3/4 oz.) condensed cream of chicken and mushroom soup, diluted
1 can (10-3/4 oz.) condensed cream of chicken soup, diluted
2 medium potatoes cubed
3/4 Cup chicken broth
2/3 Cup sour cream
1/2 Cup frozen peas
1/4 tsp. pepper

Topping:
1-1/2 Cups biscuit/baking mix
3/4 Cup shredded sharp cheddar cheese
3/4 cup 2% milk
3 tbsp. butter, melted

In a Dutch oven, combine the first nine ingredients; bring to a boil.  Transfer to a greased 13-in.x9-in. baking dish.

In a small bowl, combine the topping ingredients; spoon over top.  Bake, uncovered, at 350 degrees, for 40-45 minutes or until bubbly and topping is golden brown.  Let stand for 10 minutes before serving.

Crock Pot Broccoli Casserole (Aaron's A to Z Recipe Garden)

1/2 stick butter
1 can cream of onion soup (i've found only at WalMart) or onion soup
1 can cream of mushroom soup
1 C. minute rice
8 oz. jar Cheese Whiz
2 boxes frozen broccoli

Mix all in Crock pot and cook for 2 to 3 hours on high.

Easy Crock Pot Menudo (Recipezaar)
Prep: 10 min.
Serves: 10-12

3 lbs. honeycomb beef tripe
1 (30 oz.) can hominy (i use 2 cans)
1/2 Cup yellow onion, chopped
1 garlic clove, chopped
2 bay leaves
1 tsp. oregano
6 tbsp. Menudo Spice Mix
1 tsp. salt
1 (14 oz.) can chicken broth
tap water, to fill the crock pot

Cook on HIGH for 7 to 8 hours until the beef tripe is cooked very tender.
Add more menudo mix and salt if desired to your taste
Garnish individual bowls of menudo with lime juice, chopped onions, chopped cilantro (i like to add grated cheddar cheese).
Enjoy with guacamole salad and corn or flour tortillas!

Slow Cooker Creamed Corn (tastes like Rudy's Creamed Corn!)
prep time: 10 min.
serves: 12

1 1/4 (16 oz.) packages frozen corn kernels
1 (8oz.) package cream cheese
1/2 Cup butter
1/2 Cup milk
1 tbsp. white sugar
salt and pepper to taste

In a slow cooker, combine corn, cream cheese, butter, milk, and sugar. 
Season with salt and pepper to taste
Cook on High for 2 to 4 hours, or on Low for 4 to 6 hours.

Chicken Alfredo (cooks.com)
serves: 6

2 lbs. boneless chicken breasts
4 tbsp. oil
1/4 Cup butter
1/2 Cup Parmesan cheese, grated
3/4 Cup heavy cream
salt and pepper, to taste
1 lb. fettuccine

Heat oil in a 10 inch skillet.
Cut chicken breasts into strips.
Add salt and pepper.
Fry on medium heat until cooked through.

Sauce:
Melt butter in saucepan; add cream and cheese,
cook over low heat,
stirring constantly
Do Not Boil.

Cook fettuccine in 3 quarts boiling water.  Mix chicken and Alfredo sauce together.  Drain noodles. Put sauce and chicken over noodles.

Apple Dumplings (friend Marie Riley)

2 sticks butter
3 large Granny Smith Apples (or 5 med.), peeled and sliced
2 cans of crescent rolls
1 1/2 Cup of sugar
1 tsp. vanilla
cinnamon
1/2 can of Mountain Dew (secret ingredient!)

Set oven to 350 Degrees.  Spray Pam in a 13X9 inch pan.
Melt butter in small saucepan.  Stir in sugar, don't let sugar melt.  Stir in vanilla.  Peel and slice apples.  Separate crescent triangles.  Fill each triangle with about 3 apples slices.  Roll up triangles, place rolls in pan.  Pour sugar mixture over the apple dumplings.  Generously sprinkle them with cinnamon.  Pour Mountain Dew around the inside edge of pan.  Bake for 35-40 min. or until browned. 
Best when fresh from the oven!  (we like it with vanilla ice cream!)

Watergate Salad (kraftfoods.com)
prep. 5 min. plus refrigerating
serves: 8

1 Cup miniature marshmallows
1 pkg. pistachio flavor instant pudding
1 can (20 oz.) crushed pineapple, in juice, undrained
1/2 Cup chopped pecans
1 1/2 Cups thawed Cool Whip whipped topping

Combine marshmallows, dry pudding mix, pineapple and nuts in large bowl.  Stir in Cool Whip.  Refrigerate 1 hour.
